Like profits from any other business venture. Make more money than spent = profit. In the case of hotels, they might have a couple of income sources. Occupancy (room guests paying to stay overnight) is one... dining room, meeting space rental, catering for parties and others are also possible. As for expenses, the property, taxes, building maintenance, salaries of staff, electricity, water, etc... all need to total up less than the income...
